Change trajectory with stance width, not ball position
As an alternative to moving the ball back to hit it lower, which the instructor says de-lofts the club but also opens the face, he narrows his feet slightly. Narrowing the stance puts him more in front of the ball and de-lofts the club without changing ball position. To hit it higher he widens the stance for a little more loft. He sums it up as low is a little narrow, high is a little wider.
