Fix a hook by holding the clubface off, not regripping
For a player with a strong grip who hooks it, the instructor keeps the grip and changes the swing instead. Like Dustin Johnson - whose clubface points at the sky at the top but who holds it off for a left-to-right shot - you stay with your grip and just get the clubface to stay nice and square for longer through the impact zone. That matches the grip to the impact and straightens the ball.
